My favourite roads are pretty much most of the twisty bits between Bateman's Bay as the North East point, and Phillip Island as the South West point, and there's still plenty left for me to ride in that lot 
To be perfectly honest though, my absolute favourite bit of road consists of only about 6 corners, but I farkin love it, it's only 10 minutes away from my house, and it's the only bit of road that I know I can still get a gap on Gos

...there's just something about a constant radius, nicely cambered, smooth surfaced series of corners at that speed that just gets me going
....and don't trust Gos, he can never remember where they are until he's in the middle of them

It's Elliots Way for me, it's like the Putty rd was 10 years ago with the boring middle bit removed (5times ina row), it has everything at some point of it, absolutely NO TRAFFIC & the odd Dead animal to keep you awake.

Big fan of Black spur in the DRY, Bogong gap, Granya & the Bruxtner.
Quite a few good roads have been buggered by Urban sprawl & i usually give them the flick when that happens.

My fav ? Clyde Mt, only because I have ridden it about 20 squillion times , it never fails to satisfy. The Bega-Bombala stretch through Wyndham/Candelo/Cathcart is really really good, excellent surface, no traffic and no candycars.

I picked the Gillies out of that lot, but you'd have to group that with the Palmerston, Kuranda and Rex ranges to get the full picture. All four ranges in a day... great fun!
I know you only have so many choices, but the Coromandel Peninsula in N.Z. has to have some of the best riding I've ever done.
